Michelin France has published an updated rating of restaurants. As EcoTourism Expert came to know, this year’s guide includes a new category of “Gastronomie Durable” that ranks the restaurants meeting the standards of sustainable development.
In total, 628 restaurants were included in the list of «star» restaurants, of which 51 restaurants were included into the Gastronomie Durable category. In particular, the three-star Le Clos des Sens, Mirazur, Arpège, Alain Ducasse au Plaza Athénée. These establishments comply with the principles of ethical attitude towards workers, practice zero-waste initiatives and use only local products to prepare their dishes.
According to the Michelin France, in 2020 only 3 restaurants joined the list of three-star restaurants. To date, only 29 restaurants have been marked with three stars.
In 2020, 11 restaurants were marked with two stars, and 49 gastronomic establishments received their first star.
However, one the most famous restaurants L'Auberge du Pont de Collonges lost its star. This establishment, located near Lyon, has been recognised with three Michelin stars annually since 1956. The president of the Michelin Publishing Group, Gwendal Poullennec, personally announced the new status to its owners, while noting that the restaurant remains excellent, but does not deserve 3 stars.
Paul Bocuse ,the “godfather” of new French cuisine, founded his famous restaurant L'Auberge du Pont de Collonges. He became the prototype of the chef of the Oscar-winning cartoon "Ratatouille". And in 2014 he inaugurated the Le Bistrot de Remy cafe in Disneyland, dedicated to «Ratatouille» and bearing the name of its main character - the chef Remy. The great chef passed away in January 2018. After his death, the heirs of L'Auberge du Pont de Collonges decided to change and hired a new sommelier and a pastry chef.
