A festival of restaurant concepts took place in Moscow, which ended with an award ceremony for the most successful new restaurant projects of the year as part of the national award "Palm Branch of the Restaurant Business 2023". A significant event for Russian gastronomy has been held annually since 2006.
At the first stage, the award experts select original restaurant concepts from which a short list of finalists is formed. This year, the authors of the best new restaurant concepts of the year from nine regions of Russia shared their vision of trends and business life hacks. The chefs of the restaurants-finalists of the award showed their skills at professional master classes.
According to the results of the Palm Branch 2023 award, the Dich restaurant of the Rosa Khutor resort entered the TOP-100 best openings of the year in Russia and won a special prize at the Festival of New Year's dishes from the chef. To participate in it, the team prepared a non-classical Olivier with king crab meat, Sakhalin scallop, avocado, sweet potato and dressing based on yogurt, red and pike caviar, for which it was awarded the main prize.

The restaurant "Dich", located in the Mountain Olympic Village, focuses on the pure taste of wild nature.
